Older and creakier photographers like me are discouraged by landscapes that require long hikes with heavy camera equipment. Iceland had beautiful landscapes everywhere, usually accessible from the road side. Here are three examples. Making hay while the sun shines. Lupines are everywhere along the road sides. Small farms are in the valleys, with steep mountains right behind. There is a lot of truth in the saying "If you don't like the weather, wait 5 minutes." It often alternates between sunny and rainy within a short time period, or one can see sun here and rain there.
