Hard to explain but the screen on my X-E1 is display odd rough edges. When focusing this effect disappears and it does not appear on any photos taken.

I've attached images so I hope they're clear enough. Any help would be appreciated.

It's the edge effect part of "focus peaking". It's in the manual.

A contrast-based visual aid to make manual focusing easier.
You can turn it off if you don’t like it.

Oh I see. I've checked the manual but can't find a clear way to turn it off, what section in the settings can I do this?

I would leave it on. It let's you know what's in focus.

If it's 'fuzzy', it's in focus. If the fuzziness disappears, you're not focused properly.

If you really want to turn it off...

Scroll down to 5 on the SHOOTING MENU
Then on 5, scroll down to MF ASSIST, click to the PEAK arrow right.
Move up to STANDARD, click OK.
    Done...
